Meat, stew and rice– these are three common and basic elements of your classic Filipino savory dish. And there is good reason for this mix of ingredients. The meat adds your much-needed protein for a sense of balance in the meal. Not to mention, it adds great texture and flavor to your dish. Stew sinks into the rice extremely well to provide some tenderness to the dish. And it always provides some of the most one of a kind tastes to a recipe through a creative usage of seasonings. And the rice, commonly known as the most necessary side dish for Filipinos, makes for a filling meal. That, and it complements most viands brilliantly. The Beef Pares adopts this formula, but arguably does it better than most.
A good bowl of Beef Pares always tastes like a treat, what with the rich flavors of well-seasoned meat and broth. The delightful mix of soy sauce, star anise and black pepper make for the most aromatic and delicious dish. And this only gets elevated by the tasty, piquant garlic rice that sits happily beside our bowl of broth.
But today, Iโm going to be giving you the steps to making the kanto style rendition of the classic beef pares. This speeds up the process a bit, but makes a for a most flavorful dish all the same. And while the taste is expectedly milder, it is still one you should definitely try, especially if youโre looking for some lighter flavor for your beef.
Make this Kanto Style Beef Pares with me!
We will be getting our pares ready by grabbing a cooking pot, and heating 2 tablespoons of cooking oil in it. Then incorporate beef fat, and sautรฉ this for 2 minutes. Afterwards, add 1 piece of chopped onion, 4 cloves of chopped garlic, and 3 thumbs of minced ginger. Once again, sautรฉ your ingredients, and continue cooking until the onion is tender.
Now youโll be ready to place your 3 lbs of beef chuck thatโs been cut up into cubes in the pot. When youโve done this, keep this cooking until your beef becomes a beautiful medium brown. This may take about 5 minutes. Then pour 3 quarts of water into the pot, and let this boil.
For an added sense of aroma and sweetness, place 3 pieces of star anise in the pot. Also add 1 piece of Knorr Beef Cube into the mix for greater flavor. Then cover your pot, and adjust your heat to low. Now is about the time to get a bit patient, as we will be letting this cook for 2 to 2 ยฝ hours, or until weโve noticed the right texture– satisfyingly soft and tender– for our beef. This process also helps integrate all the flavors of our ingredients into the meat and broth.
Then to highlight the savory taste of our Beef Pares by sprinkling in ยผ cup of soy sauce, 1 tablespoon of onion powder, ยผ teaspoon of ground black pepper, 3 tablespoons of brown sugar, and some salt to taste. Stir these well into the pot, then get ready to cook up some lusciously savory and flavorful garlic rice.
Letโs cook our garlic rice– the perfect complement to our Pares!
Heat 3 tablespoons of oil in your pan, then take 5 cloves of garlic thatโs been crushed. Add this to tha pan, and sautรฉ this until you notice your garlicโs color turning golden brown. Then place your 3 ยฝ cups of leftover white rice inside. The fact that these are leftovers, and not solely newly cooked rice, gives us just the right dry texture and consistency for our side dish. This goes massively well with the flavors of our garlic rice ingredients, and will taste fantastic beside our delicious beef broth.
Stir these all together, and ensure that they are well-blended. Then season this with some salt to your preference. Afterwards, we will continue with stirring and cooking for about 3 to 5 more minutes. Then set this aside so we can put our dishes together.
Start by arranging your beef pares from earlier in a bowl, and top this off with some chopped green onions. And in another bowl, place some more chopped green onions over your garlic fried rice. This will taste particularly amazing fresh out of the pot and the pan, so serve it hot.

Beef Pares Kanto Style
Ingredients
Beef Pares ingredients:
- 3 lbs. beef chuck cut into cubes
- 1 piece Knorr Beef Cube
- 3 pieces star anise
- 1 piece onion chopped
- 4 cloves garlic chopped
- 3 thumbs ginger minced
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons cooking oil
- 1 tablespoon onion powder
- 1/4 teaspoon ground black pepper
- 3 quarts water
- 4 tablespoons cornstarch
- Salt to taste
Garlic Rice ingredients:
- 3 1/2 cups leftover white rice
- 5 cloves garlic
- 3 tablespoons cooking oil
- Salt to taste
Instructions
- Make the beef pares by heating oil in a cooking pot. Add beef fat. Saute for 2 minutes.
- Add onion, garlic, and ginger. Saute until the onion gets tender.
- Add beef. Cook until color turns medium brown (this usually takes 5 minutes).
- Pour-in water. Let boil.
- Add star anise and Knorr Beef Cube. Cover the pot and adjust the heat to low. Cook for 2 to 2 1/2 hours or until beef gets very tender.
- Season with soy sauce, onion powder, ground black pepper, brown sugar, and salt. Stir.
- Make the garlic fried rice by heating oil in a pan. Add crushed garlic. Saute until garlic turns golden brown. Add leftover rice. Stir until all ingredients are well blended. Season with salt. Stir and cook for 3 to 5 minutes. Set aside.
- Arrange beef pares in a bowl and top with chopped green onions.
- Arrange garlic fried rice in another bowl and top with chopped green onions too.
