Finally, Summer has arrived. I decided to welcome Summer by preparing something that reminds me of what I usually do during this wonderful season; grill. There are several Summer foodsย that I want to feature and the first that crossed my mind isย Inihaw na Pusit or “Grilled Squid” . This dish is very easy to prepare and does not take much of your time to complete.

Grilled Squid - inihaw na pusit

Living in an archipelago truly has its share of benefits when it comes to developing your cooking skills. For one, you have a wide array of seafood ingredients to choose from, sitting right at your fingertips. I suppose this is why we, Filipinos, have learned to make the most of our squid dishes. Take one look at Inihaw na Pusit, and youโ€™ll be able to figure out that we truly donโ€™t hold back in crafting some delightful seafood dishes.ย 

Stuffed with bits of tomato and sweet onion, then grilled to perfection to create a tender but smoky taste, this recipe is definitely one for the books. This is probably why you can count on this dish popping up during family outings, or summer gatherings whenever a grill is at your disposal. You may also remember these from visits to seaside restaurants or your favorite dampa jointsโ€” I know I definitely do! And so if youโ€™re craving some grilled squid, but canโ€™t make it to your favorite seafood restaurant, donโ€™t worry! We can make the magic happen by cooking this, ourselves. 

It may sound a bit complicated to make, with the stuffing and grilling process, but I can assure you that itโ€™s easier than it sounds. With all of our steps laid out for us, we can definitely recreate some delicious grilled squid right at home! This recipe involves just a few steps, and not too many ingredients. Just set aside about 33 minutes of your time, and we can be sure to get this ready for your party of 5. 

How to Cook Inihaw na Pusit!

Make the stuffing, and put it in the squid

First, you have to grab a large container. This is where weโ€™ll be mixing our ingredients for the stuffing. Once you have this, place 1 tomato and 1 large sweet onion, both of which youโ€™ve diced up, inside. Then integrate some salt and ground black pepper to taste. Make sure to mix these thoroughly to get all of these flavors distributed evenly. 

Now take out your 3 pieces of medium to large squid. Make sure that youโ€™ve cleaned this well before you use them. Then get your onion and tomato stuffing from earlier, and separate them into three parts so we could stuff them in each squid. If you happen to run out of this, feel free to make more using the same ratio for ingredients. Now weโ€™re all prepped and ready to go with grilling!

Start grilling your pusit for a perfectly toasty exterior

For grilling, you have to keep a close eye on your squid. Remember that it can be very easy to end up with a rubbery squid, and so be careful not to overcook it. To get it tender while cooked all the way through, grill the first side of your pusit for 6 to 8 minutes. Then turn each squid over, and grill it for the same amount of time. 

After that, youโ€™re done! Just place each squid on your serving plate of choice. And donโ€™t forget to have it with some dipping sauce. I would recommend making this with some chopped onion, tomato, soy sauce and vinegar.

Ginataang Pusit (Squid in Coconut Milk)

Lusciously creamy and refreshing, you really have to try making your own Ginataang Pusit from your own kitchen! This combines the semi-sweet and mild taste of squid with cups of coconut milk to truly bring out the best flavors. But be warned that this dish also has a bit of a bite! We incorporate some long green chili peppers to complement the smooth taste of coconut milk. And the resulting dish we get is something both exciting and comforting. Adobong Pusit

Now alternatively, you can also have your squid with more powerful flavors, perhaps in the form of some soy sauce and vinegar. Adobong Pusit is surely a great option for when youโ€™re craving a rich-tasting seafood dish. Mixed with a delightful amount of tomatoes, crushed garlic, and diced onions, the thick, velvety stew is definitely something to also love aside from our flavorful squid. This will only take up about 30 minutes of your time too. And so this is also perfect for a home-cooked meal on the go!

Inihaw na Pusit Recipe (Grilled Squid)

Ingredients

  • 3 squid cleaned
  • 1 cup soy sauce
  • 1 tomato diced
  • 1 yellow onion diced
  • 3 pieces Thai chili
  • 1/2 lemon
  • Salt and ground black pepper to taste

Instructions

  • In a large container, combine onion and tomato
    1 tomato, 1 yellow onion
  • Add some salt and pepper and mix well.
    Salt and ground black pepper to taste
  • Stuff the squid with the onion and tomato mixture. Add more if necessary.
    3 squid
  • Grill the squid for 6 to 8 minutes per side.
  • Transfer to a serving plate.
  • Make the dipping sauce by combining soy sauce, chili pepper, and lemon. Stir.
    1 cup soy sauce, 3 pieces Thai chili, 1/2 lemon
  • Serve with the dipping sauce. Share and Enjoy!

    The key is the heat. Put any seafood in burning hot oven and you will get the same result in taste (soft) and texture. Just cook for 5 -- 10 minutes in really very hot oven setting or similar. Try it.

    Many thanks for posting the recipe, along with the video. I was enticed to continue reading your recipe because of the yummy-looking photo of the pusit.

    I love cooking Filipino dishes and serving them to my Arabic husband. It will be my first time to grill squid and I hope that this will turn out to be a winner. Will keep you posted.
