What is your ideal Filipino breakfast? This sounds like an easy question, but it starts to get a bit challenging to answer when you start to think about it. I for one, want more than a single dish for this most important meal of the day . It should be a heavy meal with rice and meat. You might have a different preference than I do. Are you the type of person who wants to have fruits, or how about pandesal with cheese pimiento sandwich spread or with a slice of plain kesong puti, perhaps?
Since I love to have a heavy meal with rice and meat, I thought of a meal composed of longganisa with egg and fried rice (longsilog), but I also want to have its beef tapa counterpart (tapsilog). It will also be great to have a little bit of tocino in there — and yes, a large serving of pickled papaya (atcharang papaya).
I was having a hard time deciding, so I tried to prepare all that are available such as longganisa, beef tapa, scrambled eggs, atcharang papaya, and garlic fried rice. It was more than enough to satisfy my cravings. We all enjoyed our ideal Filipino breakfast.
I had this urge of making a special meal the morning after our return from our trip to Banff in Alberta, Canada. We had a blast during our vacation, but I missed cooking for my family since we were always mobile for almost a week. The food and ambience in Banff was like no other though. The place was majestic. We always make sure to have enough supply of atcharang papaya everyday. I am sucker for this pickled fruit and I love to have it in almost any meal. Longanisa is something that we make at least twice a year. We are fortunate to have nearby Filipino stores who sell these babies. That means I don’t need to make one from scratch more often. However, when I do, this longonisa recipe is what I always use.

I love sinangag, fried talong / torta, fried tuyo, itlog with sibuyas or potato plus toyo with calamansi as dipping sauce.
