Patis Fried Chicken is a crispy and tasty fried chicken recipe that is best eaten with rice. This fried chicken dish is marinated in fish sauce and ground black pepper before coated in flour and cornstarch mixture. This makes Patis fried chicken tasty and crispy.
Preparing patis fried chicken in your kitchen is quick and easy. All you need are chicken that are cut into serving pieces, pure fish sauce, ground black pepper, and cooking oil for frying. This dish is best with white rice of any type of fried rice.
I love fish sauce, but I sad to say that the best fish sauce that I had was not from the Philippines. Maybe we as Filipinos are making fish sauce too commercialized and cheap to the point that it lacks flavor. I won’t tell the brand of fish sauce that I used or the country where it came from – I’m just hoping that the Philippines will produce a high quality fish sauce that can compete with the international market someday.
Update: I just came back from Manila and was happy to find high quality fish sauce available to the public. I used it as a dip for pinaupong manok and it was good.
Going back to the recipe, the flour and cornstarch mixture gives texture to the chicken – it makes the chicken crisp and delicious.

Patis Fried Chicken
Ingredients
- 2 lbs. whole chicken cut into serving pieces
- ¼ teaspoon ground black pepper
- 4 tablespoons fish sauce patis
- ½ cup all purpose flour
- ½ cup cornstarch
- 3 cups cooking oil
Instructions
- Put the chicken in a large mixing bowl. Add the ground black pepper and fish sauce. Mix well and let it stay for 1 hour.
- Meanwhile, combine the flour and cornstarch in a large container. Mix well.
- Heat a deep cooking pot. Pour-oil and then let the oil get hot enough to fry.
- Dredge the marinated chicken in the flour and cornstarch mixture.
- Deep fry for 12 minutes per side (medium heat); flip to cook the other side for 8 to 10 minutes
- Transfer to a serving plate. Serve hot.
- Share and enjoy!

Hi! Do you submerge the chicken in patis or just rub it all over? I tried a similar recipe but it turned out waaay too salty! I submerged the chicken in patis lol.

Trisha, just rub it all over and let it stay for at least 15 minutes before cooking.

I tried it this morning. It was not as tasty as I expect it to be, maybe because I only marinated the chicken for more or less 15 minutes (the recipe says 1 hour). But it was still delicious. I even cooked extra for my sons’ lunch in school. I will try this again next time and I’ll make sure to follow what is written on the recipe 🙂

Thanks for the quick reply. The secret to a flavorful fried chicken is in the marinade and breading. Since we do not have too much breading for this recipe, the marinade is important.
You are right, it should be marinated longer so that the chicken can absorb the flavor. 1 hour is the minimum, but I usually do it for 3 hours or more. If you are in a hurry and wanted to fry the chicken quickly, you might want to try just simple salt and pepper. It will be more tasty compared to patis.
Yes, it will be great if you try the recipe without any alterations. I’m sure that the chicken will be more tasty. 🙂

Hey no shame in mentioning the brand of better fish sauce, I’m sure it would be good for fish sauce manufacturers back home for their research and to better their product. There was an author who apparently did compare Philippine fish sauce to the Thai and Vietnamese versions and he wasn’t happy with ours….time to step things up!

Time to step up indeed. I learned from my recent visit to Manila that there are premium fish sauces sold commercially. I tried some and they were not bad. It seems like the Philippine fish sauce industry is changing for the better.

Best Fish sauce is from Thailand… i have tried batis from Philippines..Over salty and the smell(aroma) was not as strong as well…

This recipe was simple and easy to make. I used Squid brand fish sauce. Instead of deep frying the chicken I used the oven-fried method. The scent of fish sauce baking in the oven for an hour is not welcoming. However, the taste was delicious. I’m glad I gave this a try.
