Welcome to the first episode of our “Bisita Kusine Series”! We are featuring Bicol express. This is a popular Filipino dish composed of pork, chili pepper, shrimp paste, and coconut milk.
This series is created to recognize talented homecooks who still make delicious meals for their families despite of their busy schedules .
Today I visited the kitchen of our kababayan, Gilbert “Bebet” Lainez, in Buffalo Grove Illinois. He lives a few miles south from my place. His version of Bicol Express is something worth tasting. I had the privilege of tasting it first hand, and it was really fantastic.
Let’s do this more often. Do you want me to visit your kitchen too? Tell me your signature dish in the comment section.
Bebet’s Bicol express version was impressive. It can be eaten as a main dish with rice or it can also be enjoyed as a pulutan. The pork was tender and it had the right amount of spice and creaminess. I tried his recipe here at home and everyone liked it.
