There are very few meals that Filipinos love more than breakfast! Whether itโs a value meal you can find at any fast food joint or a dish cooked with love from home, itโs always great to have a hearty, filling start to your day. And thereโs no heartier, more filling and delicious breakfast than the classic –silog meal โโ any meat you cook with eggs and fried garlic rice. Today, weโre cooking one of my favorite -silog meals, and the favorite of so many others โโ longsilog!
What is Longsilog?
True to its name, longsilog is a breakfast that consists of sweet pork (longanisa), savory eggs, and umami garlic rice! Without even laying eyes on it, longsilogโs smell wafting through your home is enough to drag even the sleepiest out of bed. Its tantalizing aroma and humble yet comforting appearance, however, arenโt what make this dish special. In fact, itโs longsilogโs simple yet flavorful taste that is the star of the show!

A Filipino –silog breakfast comes in many shapes and forms. Apart from longsilog, here are some of my favorites:
Many Filipino restaurants and carinderyas famous for their –silog meals can attest to the fact that the tapsilog is one of our best breakfast offerings! Thereโs just something so heavenly about the mix of salty tapa with a delicious egg and yummy garlic rice. I love to use a combination of pineapple juice and brown sugar, among others, to marinate my tapa in! This balances the sweet and sour, giving the meat an addictive taste.
Another beef option you can go with for your silog meal is the beloved corned beef! Whether youโre having breakfast in the East or West, corned beef has become a staple in many kitchen pantries. You can put it in your omelettes or cook corned beef with potatoes; whatever you do with it, itโs a hit! And paired with the wonderful taste of eggs and sinangag, itโs a priceless breakfast.
Apart from the tasty longanisa of longsilog, another way you can enjoy a pork breakfast is by having a lovely tosilog! Tosilog consists of cured pork or tocino, eggs, and sinangag. The bright colors of your tosilog will be a welcome treat for your eyes at the start of the day! I personally love to enjoy Tosilog by dipping this sweet pork in vinegar; the combination of flavors is heavenly!
Regardless of your viand, a –silog meal is a sunny wake up call in the mornings. Fast and easy, itโs an ideal meal for people on the go as soon as the day begins. Read on to see just how easy it is to cook longsilog โโ as easy as it is, in fact, to enjoy it!
How to Make Longsilog
Letโs cook longsilog together! I know Iโve said this is the perfect breakfast meal, but the great thing about longsilog is that you can have it any time of day! Surprise your family with this dish for a quaint and homey breakfast for dinner!
Start making your longsilog by heating 2 tablespoons of oil in a pan. Once that oil gets hot, fry 2 pieces of eggs. Weโre going for a sunny side, slightly over-easy egg, so that yolk is still runny when you slice it open later. Yum! (Feel free, however, to cook your eggs however youโd like.) Once youโve cooked your egg long enough, remove it from the pan and set it aside.
Then, itโs time to add in your remaining 2 tablespoons of oil. The next part of your longsilog to cook is the longanisa itself! Fry half a pound of skinless longanisa in your pan for about a minute and a half. This should be enough time for the outer part of your sausages to turn a light brown. Pour in half a cup of water and bring it to a boil. Let it evaporate, then fry the longanisa in the remaining oil until youโve cooked it inside out! Remove it from the pan and set it aside.
Thatโs 2 of the 3 components of longsilog youโve already handled! The last component is the easiest โโ sinangag, or garlic rice! Using the remaining oil from the longanisa, cook your crushed garlic in the pan until it starts to slightly brown. Add in your 4 cups of leftover rice and stir fry it for about 3 minutes. Season your sinangag with salt and pepper to taste.
Transfer all your longsilogโs components โโ the longanisa, the eggs, and garlic rice โโ to a plate! If you like, you can even fill a bowl with spicy vinegar as a dipping sauce for your meat. And just like that, breakfast is ready!

Longsilog Recipe
Ingredients
- 1/2 lb. skinless longanisa
- 2 pieces eggs
- 4 cups rice leftover
- 5 cloves garlic crushed
- 1/2 cup water
- 4 tablespoons cooking oil
- Salt and ground black pepper to taste
Instructions
- Heat 2 tablespoons of oil in a pan. Once the oil gets hot, fry the eggs. Remove from the pan. Set aside.
- Add remaining oil in the pan. Fry the longanisa until the outer part turns light brown (around 1 1/2 minutes).
- Pour-in water. Let boil. Continue boiling until the water evaporates. Fry the longanisa in remaining oil until fully cooked. Remove from the pan and set aside.
- Using the remaining oil, cook garlic until it starts to turn light brown.
- Add rice. Stir-fry for 3 minutes. Season with salt and ground black pepper.
- Assemble the fried eggs, longanisa, and sinangag on a plate. Serve with spicy vinegar as a dipping sauce for the longanisa.
