Chicken Asado Recipe
Chicken Asado (or Asadong Manok) is an awesome Filipino chicken dish and one of the best bets of the province of Pampanga. This dish uses simple ingredients and the cooking process is not so complicated.
Hmmm, seems like you’re eyes are hooked on the picture; let me clarify things right away to avoid confusion. Yes, the image that you are looking at is really Chicken Asado and not Chicken Afritada. But why is the base reddish? Unlike the usual dark asado dishes that we used to know (that are actually influenced by Chinese Cuisine), this special asado recipe uses tomato sauce as the base ingredient.
I first tried this dish when I visited Sta. Rita town in Pampanga. I thought that it was just an ordinary dish – but I got mesmerized right after the spoon left my mouth. How to Cook Chicken Asado
Rub salt and pepper in each of the chicken slices. Let it stay longer for the chicken to absorb the flavor. Start to pan-fry the chicken by heating the oil. Fry each chicken in medium heat for at least 3 to 5 minutes per side. Remove the chicken and set aside.
Melt butter in a cooking pot and then saute the onion and bay leaves. Pour the tomato sauce and add the seasonings including the lemon. You can let the entire mixture cook for a while, or you can add the chicken right away for it to cook longer. Both options will give you a good result. Simmer the chicken in the covered cooking pot for a few minutes until tender and then add the potatoes last.
It is time to get the warm rice and enjoy your meal.

Chicken Asado
Ingredients
- 2 lbs chicken cut into serving pieces
- 1/4 cup lemon juice
- 2 tablespoons soy sauce
- 1/4 cup butter
- 1 1/2 cup of tomato sauce
- 1 large onion diced
- 2 pieces dried bay leaves
- 2 large potatoes quartered
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3/4 cup cooking oil
Instructions
- Rub the chicken with salt and pepper and let stand for at least 30 minutes.
- Heat a frying pan then pour-in the cooking oil and Pan Fry the chicken. Set aside.
- Heat a cooking pot or wok then put-in the butter.
- When the butter is hot enough, add the onions and sauté until the texture becomes soft.
- Add-in the bay leaves and cook for a minute.
- Pour-in the tomato sauce and bring to a boil.
- Add the soy sauce and lemon juice then stir to ensure that the mixture is properly distributed and simmer for 5 to 7 minutes.
- Add the pan-fried chicken and simmer for 10 minutes.
- Place the potatoes in and continue to simmer for 7 to 12 minutes.
- Turn off the heat then transfer to a serving plate and serve.
- Share and enjoy!

Or you can fry the potatoes separately (just like the chicken) and then add this with the chicken to the sauce.

I love Asado cooked by my Tita Baby…I am assuming your recipe will resembke hers since she’s a kapampangan. But in her recipe she fries the potatoes…this will make it tender. I’m going to try it for lunch. Ciao!

I tried this today, and I recommend putting the potatoes before or together with the chicken coz the potatoes were still hard after 15 mins. But good recipe, husband really liked it.

Re-potatoes being hard yet, what I did was I put it in the microwave first for a couple of minutes or fry it first until almost done then continue cooking it with the rest

Chicken Asado; I cook this the other night before i saw your website.I what is called but my Aussie husband enjoyed it very much and asked me what is called and i cannot tell him. Now i know what to tell my friends when they asked me.
With the potato i advise that precooked it with the microwave or preboiled before adding to the checkin because the lemon juice or the calamansi juice and tomato will make the potato hard to cook sometimes. So make it sure that it is preboiled or precooked before adding. I ‘d also recommend to add carrots and couliflower,and this will make the recipe have a western taste and western look on it. hey! x im going to cook tomorrow at school..we’re going to choose a country then we have to pick one of the traditional food..of course i chosen my country…im goin to cook chicken asado or bistek tagalog..i have a question..can i just put the chicken in the oven instead of frying it???

I’m not good with cooking but with the help of my boyfriend (wait, on second thought, i think he was the one doing most of the cooking..lol), we tried this recipe and it was oh-so-delish! We used less lemon juice and added sugar as our tomato sauce doesn’t have that sweet Filipino taste. I’ve already bookmarked the site and am looking forward to cooking more food with your help.
