What Is Sarciadong Isda?

The name “Sarciado” comes from the Spanish word “salsa,” which means sauce. In Filipino cuisine, “sarciado” refers to dishes that are prepared with a tomato-based sauce, reflecting the influence of Spanish colonization on Filipino cooking. The term specifically describes the cooking method where the main ingredient is simmered in a sauce, giving it a distinctive and rich flavor.

Sarciadong Isda originates from the Philippines, where it is a staple in many households. The dish is enjoyed across the country for its simplicity and delicious taste. It is a great example of how Filipino cuisine has adapted and integrated various influences while maintaining its unique and local flavors!

Ingredients Of Sarciadong Isda

I used tilapia for this demonstration because it was the only fresh fish available locally. While I don’t dislike tilapia and use it often, I believe saltwater fish might be better for this recipe. Living in the Midwest, where the ocean is far away, limits my options. However, this is just my preference; you can use any type of fish you like for this recipe!

  • 2 lbs Tilapia cleaned – It is fried to a crispy texture before being simmered in the sauce.
  • 3 pieces medium-sized tomatoes diced – These add a rich, tangy flavor to the sauce and give the dish its characteristic taste.
  • 3 pieces medium-sized onions diced – Onions enhance the flavor of the sauce with their natural sweetness and aromatic qualities.
  • 1 3/4 cups water – Used to create the sauce, this helps to combine the tomato and onion flavors and achieve the desired consistency.
  • 1/2 teaspoon ground black pepper – Adds a mild heat and depth of flavor to the dish.
  • 1/2 cup green onions chopped (optional) – Provides a fresh, slightly sharp flavor and adds a touch of color as a garnish.
  • 2 teaspoons garlic minced – Infuses the sauce with a robust, savory flavor that complements the other ingredients.
  • 3 pieces raw eggs beaten – The eggs give Sarciadong Isda its distinctively Filipino touch, as their appearance with the tomatoes is a traditional feature of the dish.
  • 2 tablespoons fish sauce – Adds a salty, umami flavor that enhances the overall taste of the sauce.

How To Cook Sarciadong Isda?

Step 1 - rub salt on the fish
Step 1 - Put some salt in the cavity
  • To start, heat oil in a frying pan and fry the fish, making sure to rub salt over it before cooking.
  • Once fried, remove the fish and place it on a plate lined with paper towels to drain excess oil. Set aside.

  • In a clean pan, heat about 2 teaspoons of cooking oil and sauté the garlic, onions, and tomatoes until softened.
  • Next, add the fish sauce and ground black pepper, then stir to combine.
  • Afterward, add the chopped green onions and water, bringing the mixture to a boil.

Step 3 - Put the fried fish back into the pan

  • Add the fried fish to the pan and let it simmer for 3 to 5 minutes.
  • Pour the beaten eggs over the fish, ensuring an even distribution.
  • Once the eggs begin to set, gently stir the mixture.
  • Simmer for an additional 2 minutes, then transfer the dish to a serving plate.
  • Serve hot, share, and enjoy!

How To Serve Sarciadong Isda?

To serve Sarciadong Isda, transfer the dish to a serving plate while it’s still hot. You can garnish with extra chopped green onions if desired. Serve it alongside steamed rice to complete the meal, and enjoy this flavorful dish with family or friends!

Ingredients

  • 2 lbs Tilapia cleaned
  • 2 tomatoes diced
  • 2 onions diced
  • 1 cup water
  • 1/2 teaspoon ground black pepper
  • 3 green onions chopped (optional)
  • 2 teaspoons garlic minced
  • 2 eggs beaten
  • 1/2 cup cooking oil
  • 2 teaspoons salt
  • fish sauce to taste

Instructions

  • Heat oil in a frying pan then fry the fish. Ensure that salt has been rubbed over the fish before frying.

  • Remove the fish from the frying pan and place in a a plate with paper towels. Set aside.
  • Using a clean pan, heat about 2 teaspoons of cooking oil then sauté the garlic, onions, and tomatoes

  • Add the fried fish and simmer for 3 to 5 minutes.
  • Pour the beaten eggs on the pan. Ensure that it is distributed evenly.

  • Once the eggs curdles or coagulates, you may start stirring the mixture.
  • Simmer for another 2 minutes than transfer to a serving plate.
  • Serve hot. Share and enjoy!

    On my version of this dish, i usually adds little bit of minced ginger, to remove the ‘malangsa’ after taste, and i guarantee u that it taste more delicious .

    Its delicious,my italian husband and his parents ate voluntarily when i prepared this as our second menu. Actually every time my inlaws visits us,i always prepare filipino food,and panlasang pinoy helps me a lot. Salute!
