Initially, it might sound strange to combine the flavors of tomato sauce and coconut cream or milk in one dish. But every Filipino cook knows all too well just how magical a combination this can be. And a pretty good example of this would be Chicken Afritada sa Gata.
Afritada is named after the Spanish word “fritada,” which, as you may predict from the term, comes from a cooking technique involving frying. The dish is also known for having a subtle sourness and sweetness to it. But for those who might perceive the dish to be a tad too strong and rich, integrating some gata would be the way to go.
But if you want to turn back to the classic, or look at other renditions of the Pinoy recipe, I have more recipes you may want to see.
How to Cook Chicken Afritada sa Gata
Cooking the chicken
The first thing you will need is 3 tablespoons of cooking oil. Put this in your pan, and apply heat. Once the oil gets sufficiently hot, incorporate 6 cloves of garlic with 1 onion you’ve chopped. We will sauté these ingredients together, and then add 4 lbs. of chicken that are sliced up into serving pieces. Also sauté your chicken until its color becomes a nice light brown.
Working with tomato sauce, water and hotdogs
Now prepare 8 ounces of tomato sauce, 8 hotdogs, and 2 cups of water. Place all of these in your pan, and proceed to let the mixture boil.
Integrating some gata flavor
In a separate container, mix your 40 grams of Knorr Ginataang Gulay Recipe Mix with 2 cups of water. After you have mixed these thoroughly, you can pour this into your pan. Go ahead, and cover the pan so we can cook everything for 45 minutes. Make sure the heat is set to low for this step.
Cooking our veggies
Get your 1 Knorr Chicken Cube, 3 potatoes, and 4 carrots, and drop them in your pan carefully. Continue cooking everything for 8 minutes. When you are done with that, integrate ¾ cup of green peas, as well as your 3 bell peppers. We will cook all of these for just 3 minutes more.
Seasoning with salt and ground black pepper
Good job since you are now down to your last step! Just sprinkle in your preferred amount of salt and ground black pepper. And that’s it! You can transfer your meaty, vibrant Chicken Afritada sa Gata to a plate or bowl of choice. Have some rice on the side to get the full experience for this meal.

Pork Afritada
Meat is an essential part of Afritada. And plenty of satisfyingly savory pork truly completes the dish. For this Pork Afritada, we also use some hot dogs to add a bit more salty-sweetness to the dish, and just for another layer of meatiness. There are plenty of other components to ensure that you feel full after this dish. We’ve got vegetables like carrots and potatoes to provide nutrients as well.
Cheesy Chicken Afritada
Integrating the goodness of cheese is one easy way to heighten not just the flavor, but also the texture of most dishes. And so I thought, “Why not try that with Chicken Afritada?” Another reason why this recipe ultimately works is because the taste of tomato often complements that of cheese. You can see that in dishes like Chicken Parmigiana and even most pizzas. This Cheesy Chicken Afritada is perfect for diners of all ages, but it is also a great way to make your Afritada seem more appealing to kids.
Pineapple Chicken Afritada
What if we get some sour-sweetness involved too? I discovered that adding pineapple chunks can make this Filipino classic taste brighter and unique. But it is not just the fruit doing the work in terms of flavor for this Pineapple Chicken Afritada. We also work with a bunch of accessible seasonings and spices like tomato sauce, fish sauce and dried bay leaves. This is also a good Afritada variation for when you do not have a lot of time on your hands. This takes just about 50 minutes to cook all in all, and in the end, you have both a healthy and satisfying dish!
