Hoping to take the first step into a healthier diet but don’t know where to start? I’ve got you covered! What we almost always look for when it comes to nutritious dishes is vegetables. Well, we’ve got that, and a delicious and savory ingredient that could take the place of meat in this recipe. Have some Creamy Tofu with Mixed Vegetables by learning how to make it in the comfort of your own kitchen!
What is Creamy Tofu with Mixed Vegetables?
As the name implies, our main ingredient is the ever tender and perfectly seasoned tofu. This is something we deep fry, which is why you can expect a bit of a golden and crispy outer layer. Coating that with a delightful, creamy sauce, and mixing in a great selection of veggies will result in this dish!
These vegetables include carrots, garlic and green peas. These give us a perfect texture for our simple, but healthy meal. We also have some cream of mushroom to give the sauce a lot of thickness and flavor. Find out what you need to prepare for the rest of the recipe by reading below!
What are the Ingredients?
We definitely cannot forget our 48 ounces of diced extra firm tofu. As for seasonings and spices, you will need 35 grams of Knorr Cream of Mushroom, 1 Knorr Chicken Cube, and some salt and ground black pepper. Have ½ cup of all-purpose cream, 1 cup of cooking oil, 3 tablespoons of butter, and 2 cups of water ready as well.
Then for vegetables, grab ¾ cup of green peas, ¾ cup of diced carrots, 1 onion you’ve minced, 3 cloves of garlic you’ve minced, and 2 tablespoons of roasted garlic. You can leave the last one out of the recipe if you prefer the dish without this. And last but not least, you will need ¾ cup of corn kernels.
How to Cook Creamy Tofu with Mixed Vegetables
1. Cooking the tofu
Get your extra firm tofu, and put this in a pot or pan along with your cooking oil. Start deep-frying the tofu. Keep this up until it becomes beautifully golden brown. Let’s set this aside for now.
2. Sauteeing the tofu
Put your butter in a pan, and apply heat. Just melt this, and then pour in 2 tablespoons of cooking oil. Afterwards, add your garlic and onion. Sauté these ingredients until the onion gets soft. Then you can put your fried tofu inside, and sauté this too for just 30 seconds.
3. Adding some vegetables and seasonings
We can now throw in our green peas, carrots and corn. Now sauté everything for 2 minutes before adding the Knorr Chicken Cube.
4. Placing the cream of mushroom mix inside
Then grab a clean container, and put your water and Knorr Cream of Mushroom inside. Go ahead, and mix these thoroughly. Pour the mixture into your pan, and proceed to stir.
5. Reducing the sauce
Now add your heavy cream, and take the heat down to the lowest setting. Just let this simmer until the sauce reduces to half. And we’re almost done! Just sprinkle some toasted garlic if you’d like, as well as some salt and ground black pepper to taste.
How to Serve Creamy Tofu with Mixed Vegetables
You’re finally done cooking up something creamy and nutritious! You can simply transfer your Creamy Tofu with Mixed Vegetables to a serving bowl or plate of choice. I am definitely satisfied having this dish on its own, but if you wish, you could also have it with some rice. Just make sure to have the tofu while it is deliciously hot and freshly cooked! Other great side dishes for this would be a creamy soup or a vegetable stir-fry. You may also opt to add a meat component such as fried fish or chicken.
How to Store Creamy Tofu with Mixed Vegetables
This part is crucial to most recipes. After all, we can get carried away with the servings we make for every dish. If you end up with leftovers, here’s what you need to do for storage. Since we work with cream in this dish, it would be best not to store this for more than a couple of days. Just put your Creamy Tofu with Mixed Vegetables in an airtight container. And of course, make sure it is no longer hot, and is down to room temperature.
Then just refrigerate the dish. This would be great for eating for about 4 days. But definitely double check the quality of your food before you start reheating or eating just to make sure it is not yet spoiled.
