Spicy Pork Kaldereta refers to a Filipino pork stew dish. This dish involves pork belly sliced into cubes. The pork is cooked in a sauce composed of diced tomato and beef broth. Other ingredients include Thai chili pepper, carrot, bell pepper, and potato.
This dish is a variation of beef kaldereta. Both pork and beef versions are superb. This dish is intended to be spicier because of my intention to provide you with more recipe options for pulutan. This can also be enjoyed as a main dish.
Ways to Cook Kaldereta
There are many ways to make kaldereta. Versions vary by ingredient and cooking method. Check our kaldereta recipesย to see the different versions that I have created by far.
Beef Kaldereta is probably the most popular. This can be cooked with liver spread or with peanut butter. Ingredients such as green olives and shredded cheddar cheese can be added to make it taste better.
Kalderetang Kambing is a version that uses goat meat. This protein is referred to as Chevon. I personally like to have this version as a pulutan rather than a main dish.
Pork Kaldereta such as this dish is as good as its beef counterpart. Chicken can also be used.
How to Cook Spicy Pork Kaldereta
Spicy Pork Kaldereta is easy to cook. The recipe below along with the cooking video will help you succeed in preparing the dish regardless of your cooking experience.
I started by sauteing the pork with onion and garlic. This means heating oil in the pan and then adding onions and garlic. It is a good practice to soften the onion before adding pork. This makes the onion taste sweeter. You will know that itโs time to add the pork when you start to smell the appetizing aroma of garlic and onion.
The pork needs to brown a bit. Do this by sauteing it for 2 to 3 minutes while stirring. This will ensure that all sides are cooked equally. Add chopped chili peppers. The amount will depend on your tolerance to spicy food. I used around six pieces for this recipe.
Add liver spread and stir. Make sure that it blends with all the ingredients. This ingredient makes kaldereta different from other tomato-based stews. The pork needs to be cooked until tender. I did it by boiling the meat in beef broth.
The remaining ingredients are added after the pork gets tender. It is important to season the dish towards the end of the process. Taste the dish first and decide if more salt and pepper are needed.
Alternative ingredients
This recipe makes use of canned diced tomato. Fresh ripe tomato can be used. Tomato sauce is also a good option.
I used beef broth as mentioned earlier. Pork broth will work better. This is not always available in most supermarkets though. A good alternative is to use water and add a piece of pork cube.

Spicy Pork Kaldereta Recipe
Ingredients
- 2 lbs pork belly
- 1 pieces carrot sliced
- 2 pieces potato cubed
- 1 can diced tomato 14 oz.
- 1 piece red bell pepper
- 1 can liver spread 85 grams
- 6 pieces Thai chili pepper chopped
- 3/4 cup green pea
- 2 cups beef broth
- 1 piece red onion
- 4 cloves garlic crushed
- 2 tablespoons soy sauce
- 3 tablespoons cooking oil
Instructions
- Heat oil in a pot.
- Saute garlic and onion.
- Add pork belly. Cook until light brown.
- Pour diced tomato into the pot. Stir.
- Add chili pepper, soy sauce, and liver spread. Stir and continue to cook for 2 minutes.
- Pour beef broth. Cover the pot. Let boil. Simmer for 45 minutes.
- Add carrot, potato, bell pepper, and green pea. Cover the pot. Cook for 5 to 7 minutes.
- Season with salt and pepper.
- Transfer to a serving plate. Serve. Share and enjoy!
